“Fuck It, I’m Never Owning a Home Anyway” Avo Toast (3 ways).

The Basic Avo Toast:

  • Two slices of toast, buttered
  • Half an avocado
  • A squeeze of lemon juice
  • Salt and pepper to taste

Mash the avocado and lemon juice in a small bowl, season and set aside. Now, it’s time to decide what else to do with it!

The Australian

  • Vegemite
  • Sliced tasty cheese
  • Black pepper
  • Sliced tomato (optional)

Spread some vegemite on your toast, and then spread the avocado over it. Top with the cheese and/or tomato slices, and voila! It’s the classic Vegemite and cheese on toast, except you’ve managed to get some goodness into you too.

The Greek

  • 5 cherry tomatoes, chopped into quarters
  • 1/4 red onion, chopped
  • Feta cheese
  • Spinach leaves, chopped
  • Olives, halved

Mix the tomatoes, onion, olives and spinach into the avocado mixture. Spread the chunky mixture on your toast and top with some crumbly feta cheese. Go easy on the cheese if you’re watching salt/fat, otherwise, go nuts and enjoy!

The Sneaky Greens and Cheese on Toast

  • Handful of spinach, finely chopped
  • Handful of arugula, finely chopped (optional)
  • Sliced tasty cheese

Mix the chopped leaves into the avocado mixture, and spread on your toast. Top with cheese and enjoy! Avocado is tasteless enough that it only tastes slightly healthier than plain cheese on buttered toast (a classic depression staple).
